This is a very simple and wholesome soup with just a few ingredients. I used very good carrots from our vegetable box and the taste was just wonderful.

I sauteed one chopped onion in a few tablespoons of butter for a few minutes, then added one peeled chopped potato and about two lbs of thinly sliced carrots. I drizzled a bit of olive oil over it, added a bit of thyme, poured quite a bit of water over it, about 5 cups and boiled until all the vegetables were soft. Then I pureed the whole thing. The whole process took less than an hour.
