I love samfaina, a traditional Catalan dish made with eggplant, red peppers, onion and garlic. It is usually served with chicken but it goes well with lots of different fish and meats. It is great with cod. My husband made it and served it with chicken and whole wheat couscous.

Sautee some chopped garlic in ample olive oil, add thinly sliced onion, chopped eggplant and a chopped red pepper, let the whole thing cook on very low heat, until it has formed a very soft sauce and the onions are carmelized. In a separate pan place several pieces of bone-in chicken. Brown the skin on high heat on all sides then reduce the heat, cover and cook on low until almost done, then combine with the samfaina to finish it off.
