This is an easy and filling fall dish that can accompany sausage or another red meat. Sautee a chopped leek in olive oil, add a bunch of well washed chopped spinach leaves, sprinkle with salt and let the spinach cook until they reduce in size a bit. Add desired amount of pre-cooked garbanzo beans and sautee until the beans start to get crispy and the spinach is fully cooked. Serve.
