One day we had planned on tomato soup for dinner only to find ourselves with no tomatos. But we did have lots of onion so we decided to venture into the new territory of onion soups. This turned out to be delicious and really simple.
Slice 2 sweet onions and 2 shallots very thin. Warm 2 tbsp olive oil and a pad of butter in a pan. Add the slices and sautee until golden. Add crutons or day old bread (we did) and stir, add a bit of salt and one liter of vegetable stock or other broth. Cook for 15 minutes and check salt. Serve topped with a fried egg and grated cheese.
