Lentils and garbanzos are great easy dishes for winter. We eat them once or twice a week. One of my favorite ways to serve lentils is sauteed with leeks and carrots. I also add a little bit of sweet potato which makes the dish a bit sweet.
Sautee chopped leeks in olive oil until soft. Add a thinly sliced carrot and small chunks of sweet potato of the same size. Just barely cover this with water and simmer for 20 minutes. Add a bit of salt. This part can be prepared in advance. When dinnertime arrives heat the mixture back up and add 500g precooked lentils. Once it is warm, serve.
